Ingredients
- 1 cup sugar
- ¼ cup unsweetened baking cocoa
- ½ cup butter
- ½ cup milk
- ½ cup creamy peanut butter
- 1 Tbs vanilla extract
- 3 cups quick oats
- 3 cups Peanut Butter S’mores Snack Mix
- graham cracker crumbs for garnish, optional
- marshmallow bits for garnish, optional
Instructions
- Line a baking sheet with parchment paper.
- Stir together sugar, baking cocoa, butter, and milk in a large saucepan.
- Bring to a boil over medium heat.
- Boil for 2 minutes, stirring frequently to prevent scorching.
- Remove from heat and stir in peanut butter and vanilla until smooth.
- Stir in oats until combined.
- Stir in PB S’mores Snack Mix until thoroughly incorporated into the mixture.
- Drop batter by heaping tablespoon onto prepared baking sheet or use a cookie scoop.
- Gently press to shape into a cookie using the back of the spoon or cookie scoop.
- Sprinkle with optional graham cracker crumbs and marshmallow bits, if desired.
- Place baking sheet in the refrigerator and allow to cool for at least 30 minutes.
